During this course, when Lord Vishnu was resting, the demon tried to slay back Lord Vishnu. Just then the female power emerged from Lord Vishnu and burned the demon Muran into ashes.

Vishnu was pleased by the goddess and named her “Ekadashi”. Lord Vishnu asked the goddess to claim a boon but the goddess instead begged Lord Vishnu that the devotees who keep a fast on that day should be free of their sins and Lord Vishnu agreed to her declared that those fasting on that day and worshipped “Ekadashi” would attain “Vaikuntha”. This then began as a day of fast and is known as “Ekadashi”.

  2. Add all spinach, salt, pepper, and toss with garlic and oil. Sheet pan and cook on low for about 1 minute. Uncover the pan, turn the heat on high and cook spinach for another minute, or two, stirring with a wooden spoon until all the spinach is weakened.
  3. Using a slotted spoon, lift the spinach into a course dish or bowl and press with a little fresh lemon all over the spinach.
  4. Serve hot.



  • 2 large some of spinach (I used about 1/2 the bag)
  • 1 Tbsp olive oil
  • 1/2 Tbsp Italian herb spice (I use Frontier & sometimes McCormick)
  • 1/8 tsp sea salt, or to taste


Preheat oven to 350 degrees. Spread oil into spinach until all leaves are completely glazed.  Add Italian seasoning and salt, mix until evenly scattered. Cover a baking sheet with parchment paper. Put those leaves on the parchment paper so that they are not overlaying (this will allow them to cook evenly). Bake for 9-12 minutes until crispy.

The Day is collective initiative by National Bureau for Epilepsy (NBE) and the National league Against Epilepsy (NLAE).
